Off the Grain’s YUMMY Almond Flour Pancakes

1 1/2 cups blanched almond flour
1/2 tsp baking soda
1/2 tsp sea salt
2 tsp cinnamon
3 large pastured eggs – separate whites and yolks
5 Tbls coconut cream or raw milk
2 Tbls honey
2 tsp vanilla
  • Beat egg whites until they stiffen in a separate bowl
  • Mix almond flour, baking soda, salt
  • In a separate bowl, blend together the eggs yolks, coconut milk honey and vanilla.
  • Add the liquid ingredients to the dry and mix well.
  • Have fun creating your pancakes. We find they work best if kept a wee bit small in size.
