Nourished Kitchen’s Lovely Coconut Bread

¾ cup sifted Organic Coconut Flour * Coconut flour is clumpy, you absolutely have to sift it!
½ cup Organic Virgin Coconut Oil or butter or ghee, melted (We use Green Pasture’s Coconut Ghee avail. at Integra Naturopathics)
6 eggs (Free range!)
2 tablespoons honey
½ teaspoon coarse sea salt
(1 teaspoon baking powder)
  • Blend together eggs, butter, honey and salt.
  • Combine coconut flour with baking powder and whisk thoroughly into batter until there are no lumps.
  • Pour into greased loaf pan and bake at 175C (350F) for 40 minutes.
  • Remove from pan and cool on rack.

(We coat the bread with a thin layer of honey and never remove it from the pan. Cover the pan aluminum foil to keep the bread moist!)
