Fermented foods (think sauerkraut, kimchi…) strengthen immunity, support digestion when digestive fire is lower, and improve nutrient absorption during darker, colder months. Good stuff!
But…not all sauerkraut is fermented
Pickling preserves food by adding acid (usually vinegar).
Lactic acid fermentation preserves food by CREATING acid—as beneficial bacteria convert natural sugars into lactic acid.
The difference matters:
• Pickled foods = shelf-stable, no live microbes
• Fermented foods = living, probiotic, nutrient-enhancing
How to tell if a food is fermented or just pickled
Step 1: Check the ingredient list
Look for salt + vegetables only.
If you see vinegar or acetic acid, it’s pickled—not fermented.
Step 2: Look for living language
Words like “naturally fermented,” “raw,” or “contains live cultures” are good signs.
Step 3: Check the refrigeration section
Shelf-stable jars are often pasteurized or vinegar-based.
Step 4: Watch for heat treatment
If the label says “pasteurized”, the beneficial bacteria are gone—even if it was fermented initially.
Making them at home is actually quite simple - tag your fav resource/recipe in the comments and I’ll share in stories!
